Cashew nuts from tropical regions contain more selenium than European or North American cashew nuts. This is due to the soil in which they grow. Cashew nuts are a rich source of magnesium and phosphorus. Magnesium is important for strong bones and the functioning of enzymes. Cashew nuts also contain iron. Iron forms an important part of haemoglobin, an essential component of red blood cells. Red blood cells transport oxygen from the lungs to the rest of the body. Natural nuts are unroasted nuts. Natural nuts are delicious in stir-fries, in recipes and in muesli. However, natural nuts are chewier than roasted nuts. For that reason, roasted nuts are often (though not always) considered tastier.
The cashew is originally a Brazilian nut. The Portuguese subsequently took it to various continents.
Cashew nuts are the seeds of a tropical tree that is related to the pistachio tree. The nuts grow in a hard shell at the bottom of the fruit, the cashew apple. The colour of this apple varies from red to yellow. Only one nut grows beneath each apple. This nut ripens fourteen days earlier than the apple and then falls off it. After the harvest, the nuts are dried. The tropical tree only bears fruit after three years or more. The yield of one tree is between 15 and 30 kg.
Cashew nuts are dried naturally, but also artificially. In the factory they are roasted in the shell to make the husk easy to crack. The oil released in the process is collected. The nut is heated so that the brown skin can be removed. They are then sorted by size and colour.
