Seeds provide a substantial amount of minerals, a range of vitamins (B1, B2) and a number of trace elements which, although present in smaller quantities, are very important for the functioning of enzymes and ferments in our digestive system. Pumpkin seeds, also known as pepitas, also contain proteins, carbohydrates, fats and fibre.

The pumpkin originates from South America, but its cultivation has spread across North America and parts of Asia. The varieties traded in our country come from Mexico, China, Guatemala and Eastern Europe, among other places.

Pepitas are pumpkin seeds, the seeds of a special type of pumpkin. The seeds of ordinary pumpkins are unsuitable because of their hard, indigestible shell. To make them fit for consumption, the husks have to be removed from the green, oval, flat seeds. Because shelling is difficult and time-consuming, the price difference between shelled and unshelled is considerable. Pumpkin seeds can be eaten raw. Lightly roasting them makes them crunchy and gives them a delicious, nutty flavour.
