Pine nuts come from China, North America, Italy, Spain and Portugal.

Pine nuts grow inside a kind of pine cone on a pine tree and are not visible from the outside. The nuts have a slightly resinous flavour and are rich in oil.

Harvesting the nuts is extremely labour-intensive, as they have to be removed from the pine cone one by one. After harvesting, pine nuts must be dried. This takes place during the months of April and May. They are laid out in the sun so that they can dry naturally. The kernels are then separated from the shells by machine, after which they are ready for processing.
