Pecans are a good source of B vitamins and lysine-poor proteins. They also contain plenty of calcium, iron and magnesium and have a high content of unsaturated fatty acids. Pecans grow on a tree that can reach a height of no less than 55 metres. It belongs to the walnut family. Elongated, oval nut fruits grow on the tree. The pecan has a two-year cycle; every other year there is a large harvest. The fruits are reddish brown with dark brown stripes, comparable to the walnut.

The pecan has a deliciously sweet flavour. The seeds are eaten raw, but they can also be salted or roasted. Oil is also extracted from the nut. This oil is suitable for consumption, but is mainly used in cosmetic products such as soap. Nuts still in their shell will keep for about six months. It is best to store them in a dry and cool place. For long-term storage, they are best kept in the refrigerator.
