Sesame (Sesamum indicum) is a plant in the Pedaliaceae family. The species is probably one of the world's oldest crops grown for its oil. The plant originally comes from Africa: the word sesame derives from the Arabic saasim/simsim. There, the sesame seeds are often roasted and nibbled on, just like peanuts. The roots of the plant are harvested in summer and the seeds once the husks of the sesame have turned brownish-black.
It is a herbaceous plant that grows 0.5-1 m tall. The flowers resemble foxglove. The oil-rich seeds are contained in a capsule. The seeds, the oil and the root are used for medicinal and culinary purposes.
Sesame is grown in tropical and subtropical regions all over the world, but especially in Africa, South and Central America.
Sesame contains unsaturated fatty acids, proteins, vitamin E, B vitamins in particular in the form of folic acid and nicotinic acid, and minerals such as magnesium, calcium and phosphorus. Sesame seed contains up to 50% sesame oil and 20% protein. Sesame oil from roasted and cold-pressed seeds is virtually odourless, slightly sweet and hardly ever turns rancid. It does lose its aroma fairly quickly. Its good shelf life can be explained by its high content of antioxidants. In China and in the ancient Orient, the seeds are considered life-prolonging and mind-strengthening.
